Super breakfast

I've been having this for breakfast for the last little while and it's really kept my blood sugar down.


Ingredients:
2-3 eggs
1C southern style hashbrowns
1/4C shredded mozzarella
Salsa
Sour Cream
Salt
Pepper


Mix hashbrowns, eggs and cheese in a skillet and cook through. Salt and pepper to taste. Smother with sour cream and salsa.
