This is a good summer salad that's easy to make.
Ingredients:
1/4 C olive oil
1 1/2 tsp lemon juice
1 clove garlic, minced
2 tsp dried mint
1/2 tsp salt
1/4 tsp pepper
3 C sliced cucumbers with peeps
1/2 C chopped green onions
1 C bean sprouts
Mix the oil, lemon juice, mint, garlic, salt, and pepper in a med-sized bowl. Stir in the cucumbers, onions, and sprouts. Chill before serving.

Peanut Butter Balls
Ingredients:
1 C Peanut Butter
1/2 C Honey
1 C Powdered Milk
Mix together, roll into balls on wax paper and chill.
You can also put a lot of other things in with this recipe such as chocolate chips, granola, raisins, etc. Makes it almost a healthy snack and my kid loves them!

Chicken Salad
This is one that I created in Nantucket last summer and everyone went wild for it.
Ingredients:
2 Granny smith apples
2 Fuji apples
1 bag dried cranberries
1 lb walnuts (chopped)
1 lb boneless skinless chicken breast
salt
pepper
sauce:
1C mayo
1/2 C Honey Mustard
2-3 tbsp brown sugar
1/4 C Apple Cider Vinegar
(I apologize for this is an aproximation of the sauce..... I THINK this is about the amounts that I use, the sauce should be vaguely sweet, thin and creamy... Might want to use the good old taste-it method...)
Core and cube apples. If you want a smaller salad, use one of each instead of two (this recipe serves a lot). You can also use 2 lbs of chicken instead of one. Boil the chicken until cooked through and then shred it or cube it (up to you), seasoning it to taste with salt and pepper. Mix all ingredients together in a big bowl.
For the sauce, start with the brown sugar and add the cider vinegar to it to get the sugar to dissolve. then add mayo and honey mustard. Mix well and then mix sauce into the rest of the ingredients.
Let me know if you make this and the sauce doesn't taste right. I will then actually work on measuring it out and making it the right measurements... :)

Tomato salad
This is one that my dad has fallen in love with and it's super easy to make! Not to mention super healthy...
Ingredients:
Tomatoes (I personally like using the cherry tomatoes)
Green Onions
Mozzarella (I use string cheese)
Balsamic Vinegar
Chop the ingredients into the portions that you would like then add enough balsamic vinegar to make it wet. For a little extra taste and kick, add some fresh basil. Serve Cold

Here it is!
As promised. My recipes written down for you. Well, for me too as I tend to sometimes forget what went over well and what didn't. :) I'll be starting off with several easy ones and then as I get inspired I'll write down more. I hope you guys enjoy!
I will apologize in advance for some of the recipes. I go by the look and don't actually measure. I do a lot of taste testing until it tastes right. lol Maybe one of these days I will actually use some measuring devices for creating my recipes... :)
